Winemaker's Note

Pale yellow with greenish highlights. The nose reveals aromas of white-fleshed fruit and citrus, with hints of herbaceousness. Complex on the palate, where intensity gives way to freshness and a well-balanced finish.

Winemaking

Harvested at night in early September when temperatures are low, then cold-macerated and pressed in a pneumatic press to preserve the juice. Alcoholic fermentation takes place at low temperature in vats, and the wine is aged for four months on fine lees before bottling.

Food & Wine Pairing

Enjoy with appetizers such as trout arancini or cod rillettes, or as a main course with salmon tartar or grilled ravioli.

Terroir

Between Ocean & Mountain

Nestled between the Atlantic Ocean and the Pyrenees, the Gascon vineyards cover 20,000 hectares in the heart of Southwest France. A predominantly oceanic climate — mild winters, warm sunny days and cool nights — allows slow, even ripening while preserving the grapes' natural acidity.

The region's mosaic of clay, sandy and limestone soils brings water retention, elegance and minerality in turn. Sauvignon Blanc thrives here, developing signature aromas of citrus, grapefruit, passion fruit and fresh herbs, framed by lively acidity and a crisp, refreshing finish.
