An early-ripening variety harvested by night to preserve its aromas, grown between the Atlantic Ocean and the Pyrenees — where cool nights and boulbènes soils give the wine its freshness, finesse and elegance.
Pale yellow with greenish highlights. The nose reveals aromas of white-fleshed fruit and citrus, with hints of herbaceousness. Complex on the palate, where intensity gives way to freshness and a well-balanced finish.
Harvested at night in early September when temperatures are low, then cold-macerated and pressed in a pneumatic press to preserve the juice. Alcoholic fermentation takes place at low temperature in vats, and the wine is aged for four months on fine lees before bottling.
